Got this off FB a while back and finally made it yesterday. It's so good! Shared it with some friends and they all raved about it (hoping they weren't just being nice but I thought it was unexpectedly good.)

 

2 c all purpose flour

2 c sugar

2 eggs

1 tsp baking soda

1 tsp vanilla

pinch salt

1 - 20 oz can crushed pineapple (undrained) in its own juice (not syrup)

1 c chopped nuts, optional

 

Cream Cheese Frosting:

1/2 c butter

1 - 8 oz block cream cheese, softened

1 tsp vanilla

1 1/2 c confectioners sugar

coconut for garnish

 

Mix all of cake ingredients in a bowl. Pour into greased 9x13 baking dish; bake at 350 for 40 minutes until top is golden brown.

 

Frosting:

Beat butter, cream cheese, and vanilla together until creamy. Gradually mix in confectioners sugar. Frost cake with frosting while still warm (not right out of the oven but I let mine sit about 20 minutes). Sprinkle with more chopped nuts and coconut.

 

I let mine totally cool before cutting, the batter is really soupy so the cake was crumbly when warm. Chilling it made it much easier to cut. I used pecans; macadamias would have been good but a lot more expensive than pecans. Always have pecans in my freezer, so I used the cup in the batter and another cup on top.

I copied the recipe.  Hopefully, after my mouth has healed up I'll be able to enjoy this cake!  It does sound like a great dessert to make for the holidays too.

I was just in Hawaii in June and picked up a piece of "Hawaiian Pineapple Cake" at a local market there. I was blown away with how good and moist it was. Have been hankering for it since, but had no idea how to make it. Thissure sounds like it ot me. I am writing it down and making it. Thanks!

Oh my!  That looks sooo good to me...especially right now lol!  Thanks for the recipe and posting the picture.  It really helps me when baking to know what something is supposed to look like. 😃❤️❤️

My mom use to make pineapple upside down cake with cherries.  It was so moist and delicious.
