This is an old one I had almost forgotten about, but friends fixed it for us recently. Nobody really seems to know the exact origin of this recipe, but it's been feeding groups of people for decades. It's believed to be an entirely American concoction, maybe called "Hawaiian" because of the pineapple and coconut added to the rice and chicken.
For the life of me I've never understood why tomatoes are in this recipe, but if you 'google' you'll find a lot of different ingredients people choose to use, but this combination is the one that is familiar to me. I think the dish would be much improved by a homemade chicken gravy, but the fun of this dish is that you can prepare ahead and then it is an easy meal for many people. so using the soup and broth for the gravy keeps it simple.
I've seen it served different ways, but it always starts with rice, chicken, and gravy. The other foods may be on the table in bowls, or the hostess may serve them one at a time allowing people to choose which ones they might like.
Hawaiian Haystack
Pineapple tidbits
Chopped green onions
Chopped green pepper
Chopped celery
Diced tomatoes
Cooked chicken, cut into bite size pieces
Cooked rice
Sliced water chestnuts
Grated Cheddar cheese
Chow mein noodles
Coconut
Toasted almonds, slivered
Put rice on your plate then some chicken, cover with chicken gravy and then top it with any or all of the above ingredients. You can put more gravy on.
Chicken gravy:
2 cans cream of chicken soup
1 can chicken broth
Heat.
