Have you ever made Bacon Wrapped Green Bean Bundles?

If you have made these, can you share your recipe or tell me about them? I've never even eaten them but would like to serve them when my girlfriends come to visit. The recipe I'm looking at has brown sugar in them and I'm wondering if they are overly sweet. I'm already serving a side dish that is really sweet.....St Clairs sweet potato casserole. I really want a plain, but a little fancy green bean item....or some greenish vegetable. BTW, my menu is Beef Tenderloin with Horseradish Sauce, the sweet potato casserole, and a broccoli rice casserole. I'm serving the broccoli rice cause I already have it on hand and need to use it. I don't want to do green bean casserole cause then I would have all casserole items......tooooooo much fat and richness.

I would appreciate any thoughts or suggestions. I can get stuck making the same things over and over......a real lack of creativity here.

Maybe it would help if I posted the recipe I was considering:

Bacon

2 16oz. cans whole green beans

3/4 stick margarine

1/2 cup brown sugar

garlic powder to taste

salt and pepper to taste

Basically, you wrap 5-6 beans with a half a slice of bacon and secure with a toothpick. Put these in a baking dish. Then you heat the margarine, brown sugar and seasonings together and pour over the beans. Bake covered at 375 degrees for 45 minutes...uncover the last few minutes.

Hmmmm, I just stepped away from the computer screen and came to my senses. 1/2 cup of brown sugar sounds pretty darn sweet to me! Also, I just did a Google image search of Green Bean Bundles and there are some where the bacon does not look very brown.....I can't stand bacon if it's not beyond crisp. Maybe it's back to the drawing board for me.......unless someone here has a more savory Green Bean Bundle recipe.

I have had green bean bundles but only with fresh green beans not canned and not with all that sugar. Sorry I do not have a recipe.

Yeah, dat's a lot of sugar. Earlier I was thinking I would have to use canned beans cause it's the off season. But duh, then I remembered they have those fresh beans in the packages at most stores. They always look pretty good.

I haven't done bacon wrapped bundles with green beans, but have done asparagus spears. Just wrapped 3-5 spears together depending on thickness and then kosher salt and fresh ground pepper. Drizzled with a little EVOO and girlled. They were great! You might try the same thing with green beans or use asparagus. If you did the beans I would give it a trial run so you know it tastes like. Good luck and enjoy time with friends.

Thank you, Rocketmom. Maybe I should do the asparagus bundles. We won't be grilling anything this time of year. Even though I live in the South, we are having brutally cold temps and such.....sleet and freezing rain as I type. This has been a winter to remember all over this country.

I was thinking asparagus too. A saw it advertised in the grocery store flyer. Trader Joe's has a good frozen asparagus.

Here is the recipe I had for Christmas with beef tenderloin -

1 1/2 lbs fresh green beans

1 stick unsalted butter

1/2 teaspoon dry mustard

1 teaspoon brown sugar

1 minced garlic clove

Blanch beans for 4 minutes - drain in cold water

Melt butter and combine with other ingredients. Make bundles of green beans and wrap with bacon. Pour sauce over green bean bundles and marinate overnight in the refrigerator.

Bakes uncovered at 375 degrees for 40-45 minutes.

The bacon will be crispy and the beans slightly browned. They are good hot or at room temp.

Enjoy!

OHHHH, this sounds absolutely perfect! Thank you so much. I know it can't be too sweet. And the marinating in the fridge overnight is perfect for my schedule. I like to do things in advance......can't talk and cook at the same time.
