@Shihtzursqmom Thank you for asking this as I bought 6 chiles this am from Fred Meyer & I'm in PNW. When I googled what to do w/them there is a multitude of recipes/comments/ideas but I don't know where to start. I like some spice & not too complicated.

@Shihtzursqmom. Lol. I buy mine roasted and frozen. I put them anywhere I'd use bell pepper plus anyplace else I can think of. I wouldn't buy them without knowing how hot they are. They could be inedible for you. I buy mild.

I cut them down the middle, cook up some ground beef, mix in cream cheese and stuff them and wrap in bacon. Bake them for about 20 minutes or so at 350.

As @Kachina624 mentioned use the chile in place of bell peppers. I make a Pico de Gallo using a fresh chopped tomato, some chopped onion, and chopped fresh green chile. Vary the amount of each according to your preference for each ingredient. Mix in a teaspoon of sugar and a half teaspoon of white vinegar. Stir. Let sit for a few minutes before serving. Before my acid reflux, we had this every meal during the tomato/chile season.
I only buy mild chile because the heat index for mild can vary quite a lot. I used to eat a whole chile with a sandwich instead of a pickle. The fresh ones are a good side accompaniment to any meal. If they seem too spicy, cut open the chile and remove the seeds.
The roasted chile are used in enchiladas, meatloaf, casseroles, etc. If you make a broccoli and rice casserole, line a row of roasted chile as the last layer then cover with cheese and bake to melt the cheese. Roasted green chile is all about the flavor. Hatch chile have a distinct taste.
My expertise with roasted green chile is limited. I hope some of the ones who know how to make a good enchilada sauce will share their recipe.
At the grocery ask to see the box that the chile were received. Our grocery stores have boxes that the growers labeled hot, medium, and mild. These boxes are stacked in large display areas. I only buy from the mild box. Even if your store only received one box, it should be labeled. If not, taste one before making a dish too hot to eat.

@Shihtzursqmom. Actually, I usually buy them at Walmart. All the big stores have people outside roasting Chilies in rotating bins, including Walmart. Smells wonderful.
