Re: Has anyone tried Stovetop Meatloaf?

Never would have thought of this, but we like stovetop so will give it a try. DH likes a brown gravy with onions and mushrooms on his meatloaf, so I never put a topping on it.

Made my favorite stovetop/pork chop recipe in the crockpot last week and it disappeared:

Layer in this order:

1 lb. sliced mushrooms (makes the meat really moist but can be omitted)
5-6 boneless pork chop
1 pkg. stovetop (I used pork flavor) made according to pkg. directions but omit butter
1 can corn kernels (or frozen - either is fine)
1 can golden mushroom soup (cream of anything will work just as well)

Cook on low 7-9 hours. All you need is a salad or something green.

Oh, that sounds really good and easy. Thank you. I keep boxed stuffing on hand all the time too.

I made a casserole last week with chicken, stuffing, drained green beans and a can of chicken gravy. Not a health food, probably, but pretty tasty. I would term it a "comfort" food.

I found this recipe on the internet. I apologize that I don't know who to credit. It was on a page with a whole bunch of chicken/stuffing recipes. If someone just wanted a chicken and stuffing dish, they could omit the green beans.

QUICK CHICKEN AND STUFFIN' CASSEROLE

Pam spray
2 tbsp. butter
2 lbs. chicken tenders, boneless (I used breast tenderloins)

1 (16 oz.) can whole green beans, drained (I used cut green beans, not whole)
1 (12 oz.) jar chicken gravy (I used a canned gravy)
1 box any kind chicken or cornbread flavored stovetop stuffing (you can use low sodium Stove Top if desired)
Salt and pepper to taste
Durkee "natural blend" spice (I used a little poultry seasoning)
Covered baking or roasting dish (I baked mine uncovered!)

Spray the bottom of baking dish with Pam. Place chicken pieces in the bottom of dish. Salt, pepper and season lightly with natural spice. Place small pats of butter on top of chicken pieces. Bake about 30 minutes at 300 degrees or until chicken is just done, do not overcook.

Fix stuffing mix as per directions on box. Pour on top of cooked chicken in the baking dish (I poured most of the grease off first). Pour jar of gravy over the top, spreading evenly. Drain water from the can of beans. Place whole beans on top of mixture around the sides of the pan.

Cook again at 300 degrees about 15 to 20 minutes or until the gravy has melted through the mixture.

Note: the recipe didn't say what size baking pan to use. I started out with 9 x 13 pan but switched over to an 8 x 8. I wanted the stuffing to be thick and dense (which it was). I thought if I continued with the 9 x 13, the stuffing might be spread out too thin and be crispy. I suppose you could use two boxes if you wanted to keep it thick in the bigger pan. Or some may prefer it to be thinner and crispier. I don't think you can really go wrong with it either way. Smiley Happy

I made this tonight and we all loved it!! Thanks for this great recipe!

It's a great meatloaf, I add mushrooms, onions and cheese. Also I use 1 pound hamburger and 1 pound ground pork.

I have made this version many times and love it:

Meatloaf Stuffing Muffins

2 lb. lean ground beef (or turkey)

1box stuffing (any flavor)

2 eggs

1cup water

1 packet onion soup mix

Spray cooking spray in muffin tins (12 muffins)

Mix all ingredients and press into equal amounts into muffin cups.

Bake 25-30 minutes on preheated 350 degree oven.

Freeze leftovers and easily pop in the microwave for 1 or 2 minutes to reheat.

I love this idea! Thanks so much.

Re: Has anyone tried Stovetop Meatloaf?

I make what we call MealLoaf. The basic recipes 1lb ground beef, 1lb ground sausage, 1 egg, 1 packet onion soup. The meal part comes in by adding 1 package of Stove Top, or 1+1/2 cup of instant potato buds, then veggie of choice. My favorite is 1/2 cup sliced mushrooms and 1+1/2cup baby frozen brussels sprouts. With the sausage and the frozen sprouts no need for adding extra water. 350 for about 60-80 minutes. If you have a halogen oven about 400 for 50 minutes.I top it with ketchup and brown sugar or when my family comes to visit with a can of tomato soup and a couple of sprinkles of Worcestershire. it's one of those 'that's how grandma did it' thing.

But you can use diced potatoes with onion pearls or mushrooms with a can of drained spinach. Raw potatoes take a little longer cooking. After making it for a friend he does it now with sauerkraut and peppers.

Re: Has anyone tried Stovetop Meatloaf?

We made this for Valentine's Day. It was good but dry. We used one with steak sauce and barbecue sauce. The recipe made two loaves so we cut it in half. But because it turned out dry we will use the amount of sauces that they use for two in our one loaf.

Re: Has anyone tried Stovetop Meatloaf?

I'm surprised to hear that. Ours was very moist. Did you allow the stovetop to sit in the water for a while to soften? I'm making it again this week.
