I just made it again tonight and it was even better than the first and very moist. The difference was I saw a pack of meatloaf mix at Wegmans which is a mix of beef, pork and veal and it weighed 1 1/3 lbs. I let the stovetop soak in the water and egg for about ten minutes then added the meat. I did it about 10 am and didn't cook it til tonight so maybe that helps it to moisten too. I made a glaze of barbecue sauce, pepper jelly and a squirt of sirracha. I covered the loaf with half before cooking and he other half after 30 minutes. It was absolutely delicious.

I made this tonight, just as the OP wrote it out. Very, very good. I used cornbread stuffing mix. Hubby liked it also. I will make again. Thanks for posting it.

The recipe we used didn't call for soaking the stovetop in eggs and water. I will remember this the next time I make it.

Glad you enjoyed it snickster. It's an easy, quick recipe and I'm happy to have this recipe. Makes a great meatloaf sandwich too with the leftovers!
