Has anyone ever made ice cream bread?

My one granddaughter (who loves to cook and bake) told me about ice cream bread. I never heard of it until now. You use ice cream and self rising flour. (Any flavor of ice cream will do). Thats it, just 2 ingredients. You bake it in a loaf pan. I did a search online and I found the simple recipe. I was wondering if anyone ever tried it. We will probably make it this week when my grand kids are here.

I've never heard of it, but TWO ingredients!-- that's my kind of recipe!

This is the first bread my daughter learnt to bake.As a substitute for self-rising flour you can also use 1 teaspoon baking powder and 1/4 teaspoon salt in a measuring cup and later add all-purpose flour to measure 3/4 cup.

Ice-cream Bread:

This two-ingredient bread is terrific any time of day. Pop it in the oven while you're preparing supper, or serve it for afternoon tea. If you are lucky enough to have leftovers, toast a few slices for breakfast and serve with butter and jam.
Yield: Makes 1 (8-inch) loaf


Ingredients:

1 pint (2 cups) ice cream, softened
1 1/2 cups self-rising flour

Preparation:

Stir together ice cream and flour, stirring just until flour is moistened. Spoon batter into a greased and floured 8- x 4-inch loaf pan.

Bake at 350 for 40 to 45 minutes or until a wooden pick inserted in center of bread comes out clean. Remove from pan, and cool on a wire rack.

Note: Batter may also be divided evenly between 2 greased and floured 5- x 3-inch loaf pans. Bake at 350 for 20 to 25 minutes or until a wooden pick inserted in center of bread comes out clean.

I have only tried the 2-ingredient Nutella Ice Cream Cake. Yummmmm. High in calories, however.

Ice Cream Bread - Two Ingredient Recipes - Pineapple Coconut

Cook time:
45 mins
Total time:
55 mins

Serves: 6-8
Ingredients:

2 cups of softened ice cream, any flavor
1½ cups of self rising flour

Instructions:

Preheat your oven to 350 degrees. Grease an 8.5"x4.5" pan. (anything from 8x4-9x5 will work).
In a mixing bowl, mix together the softened ice cream and the self rising flour, until combined. Do not over mix, just until combined.
Using a spatula, pour into the prepared loaf pan and smooth out the top with the spatula.
Bake for 40-45 minutes or until a toothpick inserted in the center comes out relatively clean with just a few crumbs.
Remove from oven and allow to sit for about 5 minutes.
Remove from the pan and allow to cool the rest of the way on a cooling rack.
Enjoy warm or at room temp. Only keeps for 2-3 days.

You can use any flavor ice cream. Do not use low fat or sugar free ice cream.
