I love Harvard beets! Smile This recipe is from my mom.

Harvard Beets

2 cups beets, diced (reserve juice)
½ cup sugar
1 Tablespoon corn starch
½ tsp salt
1/3 cup vinegar
1/3 cup juice from beets
2 Tablespoons butter

Cook all ingredients, except beets and butter, until slightly thickened. Add beets and 2 Tablespoons of butter. Serve hot.
