Hannah's Bananas
1 1/2 cups melted butter
2 cups sugar
3/4 cups mashed, very ripe bananas (2 medium or 3 small)
4 tsp. baking soda
1 tsp. salt
2 eggs, beaten
4 cups flour
2 cups finally chopped walnuts or pecans (measure AFTER chopping)
1/2 cup sugar for rolling
Stire the sugar, eggs, baking soda, and salt into the melted butter. Add the mashed bananas, and mix thoroughly, then mix in first the flour and then the nuts. Cover bowl and refrigerate for at least 4 hours.
When ready to bake, preheat the oven to 350 degrees.
Roll the chilled dough into walnut sized balls. (Wetting your hands makes the dough easier to handle.) Put the 1/2 cup of sugar into a small bowl, and roll the balls in it. Place the dough balls onto a greased cookie sheet, and press down just a little so then don't roll off. (Return the bowl of dough to the refrigerator until it's time to fill another cookie sheet.)
Bake for 10-12 minutes, until lightly golden in color. Cool for 2 minutes on the cookie sheet, then move to a wire rack to cool completely.
Makes approx. 10 dozen cookies that freeze very well.
