I was looking for a beef pot pie and found a recipe but comments said it was more like a quiche and was bland so I did my own thing and came up with this.
Hamburger Pot Pie
Preheat Oven to 400
1 pound ground beef
1 can mushrooms drained
1 tbs ketchup
1 tbs garlic powder
1 small onion chopped
1/4 bacon bits or 3 slices of cooked bacon
1/4 cup taco seasoning
8 ozs grated cheddar
1 cup bisquick
2 eggs
1/2 cup milk
Brown beef. Add ketchup, onions, garlic powder, taco seasoning and mushrooms to meat. Cook for 5 minutes on low to medium heat. Place mixture in 13”x9” metal pan. I lined it with parchment. Top with cheese. Mix bisquick, eggs & milk in a bowl. Pour this on top of meat mixture. Cook for 35 minutes

This is a twist off the classic cheeseburger pie recipes that were so popular in the 70's.

I didn't know they were,popular then. I just wanted a meat pot pie but with ground beef. I found several recipes but like I said they had more a quiche consistency. It was yummy and so simple so I wrote up the recipe as I made it to save for myself and figured I'd share. I need easy recipes right now since I'm cooking so much.

Kids will also eat a base that tends towards the Mexican and is topped with corn bread. Cheese is the bait!

I did think about using cornbread mix on top. Since I kinda went Mexican with the taco seasoning. I bet it would be great.

As I type, I am simmering the cubed beef chuck roast and vegetable filling for a beef pot pie in my Dutch oven in the oven. Am going to cheat and use a 9" refrigerated pie dough round to top it off.

I love that idea. I'm running out of ideas for easy things to make that I'm not sick of.
