I whip out my FoodSaver & portion wrap my ham leftovers. My Honey Baked Ham gives us fabulous opportunities. It allows me to not feel like we have eat ham for the next week in some way shape or form. I also love the Kansas City Spiral sliced Caramel Butter Toffee glazed as well. We alternate every other year.

I did not have ham this year but my favorite way to use up the bits and pieces of a Honey Baked Ham is ham salad.

I don't have any ideas if it has to be a casserole. But I love either a grilled ham & cheese or macaroni and cheese with him.
I also will vacuum seal a bunch of it to keep in the freezer, then I don't have to eat ham for ages, as I tend to do better with variety. My husband, OTOH, will eat the same thing until the end of time and be happy. ![]()
I will vacuum seal some packets of slices and some packets of scraps.
I also will take the bone, with a bunch of ham left on the bone (the amount of ham depends on when I just get tired of removing it), and make a pot of split pea soup.
If I cannot do that, I will vac seal the whole bone with some ham on it and do it another time. Last time I had two bones so I got out the mondo pot and made a HUGE batch of split pea soup. Then I take that, after cooled, and portion it out in L&L containers, freeze, then pop it out and vacuum seal each one individually. It will store for ages that way and stay pristine.

I like to put cubes in scalloped potatoes. Makes an entire meal.
Also, ham bits are great in corn chowder. Make a base of trinity (peppers, onion and celery), add flour and broth to bring up the roux. Then add in corn (I use a can each creamed and kernel.) Add about a cup more of chicken broth. Add in ham bits. Cook until veggies are soft, then add in milk to make a soup consistency.

@chickenbutt, omg, you are soooo right regarding the ham bone for bean soup! I almost get the bone-in hams just for the fabulous bean soup it makes with those ham bones. I use the pkgd 12 bean soup bags; two of those bags fit nicely in my 6 qt crock pot along with garlic, diced onion, carrots & celery. Don't forget the cornbread, lol. When my soup is done, I stir in about a cup of milk to give it some texture. Don't forget a scoop of sour cream, a sprinkle of shredded cheese & a douse of Lawry's salt!

This ham casserole is what we had yesterday for Easter. It's an old recipe we've had in our family for several years.
1 box of Uncle Ben's wild and brown rice with seasonings prepared as stated on box.
12 oz. package of chopped broccoli, cooked
3 cups chopped ham
1 4 oz. can of sliced mushrooms drained
2 cups shredded cheddar cheese
1 can cream of celery soup
1 cup real mayo
2 tablespoons mustard
1/2 teaspoon curry powder
1/4 cup parmesan cheese
Layer first 5 ingredients in casserole dish. Mix soup, mayo, mustard and curry powder and pour over layered ingredients. Sprinkle with parmesan cheese.
Bake at 350 degrees for 35 to 45 minutes
