2 | cups leftover ham, chopped in a food processor |
1 | cup celery, finely diced |
1/4 | cup sweet onion, finely minced |
1 | teaspoon Dijon mustard |
2 | hard-boiled eggs, diced |
1/4 | cup hot pickle relish, drained |
1/2 | cup good quality mayonnaise |
Directions
Mix all the ingredients until well blended. Spread on white bread. Paula says that the trick is to use the best ham you can find, preferably an authentic Smithfield ham.
THIS ONE!
Well, almost.
A few years back, I suddenly wanted ham salad which I hadn't eaten since I was a kid. I tried a few different recipes, and found that adding a few hard boiled eggs really makes a difference. It mellows the flavor nicely. You won't even know they're in there!
I threw the eggs & a squirt of mustard into the food processor, pulsed, then added the roughly chopped ham and gave it a few pulses. I stirred in some mayo, sweet pickle relish & a squirt of mustard by hand & that was it.
It's so nice that you're trying to please your sis.
Muddling through...
