For those that own the Wolfgang mini cooker (1.5 cup), we should be able to double the recipes for the Curtis cooker (3 cup)

 

This recipe below  is scaled for Wolfgang 1.5 cup cooker. I use the AMAZING Better Than Bouillon that is sold in a jar. Easy recipe for kids to make a quick/easy meal - I prep the shredded cheeses and keep them in small containers in the refrigerator (I always buy bulk cheese and shred myself)

 

I'm interested to try the Curtis mac and cheese recipe that he's been showing during the presentation that uses cream cheese and cheddar.  If anyone has noted the ingredients info, please share

 

Macaroni & Cheese
1 - 2 Servings
INGREDIENTS
3/4 cup elbow macaroni
1/2 cup heavy cream
3/4 cup water
1 teaspoon powdered chicken bouillon base
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
1 tablespoon shredded parmesan cheese


METHOD
1 Combine noodles, water, bouillon and cream in VersaCooker, lock Lid
in place, and press COOK. Stir occasionally.
2 When machine switches to WARM, add the remaining ingredients
and stir thoroughly until all cheese is melted. Replace the Lid, press
COOK again. When machine switches to WARM it is ready to eat

Is this mini multi cooker the same thing as an Insta pot?

l don't even know what an insta pot does....I don't cook a lot..just wondering.

I think they are similar appliances @likeitis . I like the mini sized ones bc I can make brown rice in one and white in another (to satisfy those that don't like brown rice) also for smaller portions or  individual meals, great for oatmeal, quinoa

I love bento box style salmon over rice. I haven't made the mushroom rice, I just make this recipe with white or brown rice and I marinate the salmon in teriyaki sauce

 

Soy Steamed Salmon filets
with Shiitake Brown Rice
1 - 2 Servings


INGREDIENTS FOR STEAMED SALMON
1 thin salmon filet cut into cubes
2 teaspoons mushroom soy sauce
1 teaspoon fresh ginger, cut into julienne
1 green onion, cut into julienne
1 clove garlic, cut into julienne


INGREDIENTS FOR THE RICE
2/3 cup brown rice, preferably organic
1 plus 1 tablespoon cup stock or water
1 bay leaf
2 teaspoons good olive oil
1/4 cup dried shiitake mushrooms, rehydrated in 1 cup hot water,
squeeze to remove excess water (use this leftover liquid in place
of part of the stock called for if desired)
2 teaspoons mushroom soy sauce
1 clove garlic, smashed
1/2 teaspoon sambal oelek or chili flakes
Kosher salt and pepper to taste
1 green onion, sliced thinly on the bias


METHOD
1 Rub mushroom soy over salmon. Top with ginger, green onion and
garlic. Set aside to marinate for 30 minutes.
2 Combine remaining ingredients except for green onion into
VersaCooker bowl. Stir, lock the Lid and press COOK.
3 When machine switches to WARM, open and top rice with salmon.
Sprinkle over 2 tablespoons of water, close Lid and press COOK.
4 Cook 4 - 7 minutes or till fish is done to your liking.

@Infinite Mom 47  - please share your favorite recipes! I would love the pasta recipe that has the cream cheese + cheddar cheese.

Another Wolfie 1.5 cup sized recipe

 

One Pot Pasta
1 - 2 servings


INGREDIENTS
3/4 cups dry pasta such as elbow macaroni corkscrew pasta
1 cup liquid, (beef or chicken stock or water)
1/2 cup favorite pasta sauce, bottled pasta sauce or homemade
1/4 cup shredded Parmesan or mozzarella cheese


METHOD
1 Combine all ingredients in VersaCooker bowl except the cheese.
2 Lock the Lid and press COOK.
3 When the unit switches to WARM open Lid and stir, top with cheese.
Close Lid and leave on WARM setting for 5 minutes.
4 Serve hot.

Steel Cut Oatmeal
 
Ingredients
 
  • 3/4 cup steel cut oats
  • 2 cups water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pure vanilla extract
  • 2 tablespoons raisins
Directions
  1. Place ingredients into the Rice cooker pot.
  2. Press cook. Oatmeal with be ready in 10-15 minutes.
  3. Variations: Add dried fruit or 1/2 cup honey and 1 teaspoon ground cinnamon at the start of the cooking cycle

BOURBON CHICKEN TENDERS

 

3 Raw ChickenTenders (or I just sliced up a boneless chicken thigh)

1/4 cup Brown Sugar

1 TBSP. Bourbon (I substituted 1 tsp. McCormick Brown Sugar Bourbon marinade)

1/3 cup Chicken Stock

2 tsp. Oyster Sauce, bottled

1 TBSP. Soy Sauce

2 ea. Garlic cloves, chopped

2 ea. Fresh Ginger coins, chopped

1 TBSP. Cornstarch

 

PERFECT WHITE RICE  FOR SERVINC.

1 Green Onion, julienned.

 

1. Combine all ingredients, except rice and green onions in rice cooker and stir.

2. Close lid and press COOK.

3. Cook for 20 minutes or until chicken is cooked through and sauce is bubbly.

4. When cooking is complete garnish as desired and serve with rice and green onions.

 

This recipe is similar to bourbon chicken available at most mall food courts across the country
