I consider myself a pretty healthy cook. I use minimal processed food, lots of vegetables and almost never fry things but this is worth it to me. I usually double this recipe.
8 oz medium shrimp
1 T egg white
1/4 t salt
1/2 cup cornstarch
oil for frying
1/2 T condensed milk
1/2 T honey
1 t fresh lemon juice
3 T mayonnaise
1/2 cup walnut halves
1/4 cup water
1/4 cup sugar
Marinate shrimp with egg white and salt 30 minutes.
Rinse walnut halves with cold water, drain and set aside. Bring water to a boil and add in sugar. Keep stirring until the glaze thickens. Lower heat to medium and add walnut halves. Keep stirring until mixture becomes golden brown in color. Transfer walnuts onto parchment paper to dry.
Mix condensed mild, honey, lemon juice and mayonnaise in a small bowl. Set aside.
Dust the marinated shrimp with the cornstarch. Shake off excess.
Heat 2 to 3 inches of oil in a wok or stock pot to 350 degrees. Gently drop the shrimp into the oil. Deep-fry the shrimp to light brown. Fish out shrimp and drain on paper towel lined plate.
Combine the shrimp and condensed milk mixture. Toss well to coat. Transfer shrimp to serving platter. Garnish with glazed walnuts.
