1 pound bone in chicken thighs, skinless
1/3 cup hoisin sauce
1 clove garlic, minced
3 T low sodium soy sauce
1/4 chopped scallions (white part only)
1/8 t cayenne pepper
2 T rice wine (mirin) or sherry
green part of scallions chopped for garnish

Preheat oven to 425 degrees.

 

In a large measuring cup mix together all ingredients except chicken and chopped green scallions.  Add to a bowl with chicken thighs. Coat thighs.

 

Place chicken in a baking dish that you have lined with foil and lightly greased.

 

Cook for 20-25 minutes, uncovered, until cooked through.  Remove baking dish and cover with foil to rest for 10 minutes.  Serve garnished with green scallions.

 

I can't usually find bone-in skinless thighs but the skin is easy to pull off and I trim off the extra fat also.  Be sure to line the pan with foil because of the sugar in the hoisin sauce it took three days for me to the get my baking pan clean!
