I really am in need of some help here. I tried many years ago to make homemade pasta and never could get it right. I am a novice and have only played around but thought it would be a fun project to return to to see if I can conquer making pasta or let it get the best of me!!
I have a great pasta maker (a manual one ) and a recipe that calls for using Semolina & Extra Fancy Durum Pasta Flour. My problem is that after I make it, have it rolled out, to make spaghetti and cut into strips, when it drys, the pasta breaks easily. It breaks when I touch it..brittle like. What am I doing wrong??? Any help would be very much appreciated!!
