HELP ! NEED FRUGAL GOURMET CHILI BEANS

Recipe from way back. I have the cookbook somewhere. lol. I have a feeling it's packed away with a bazillion other cookbooks. Not sure if it was from The Frugal Gourmet,by Jeff Smith  or, The Frugal Gourmet.Cooks  American, by Jeff Smith.  It was recipe that had beans in it, might have been a fireman's recipe?  I know it's secret touch was roasted whole Cumin seeds.  If anyone has this recipe I would dearly appreciate having it. I know he hit scandal and show,was cancelled years ago!  He passed away a while back..but his recipes were always tried and true to me, and this chili bean recipe was a killer. I would just order cookbook again, but not sure which one it was!   Thank you so much in advance!!!!

could it be this chili recipe?

TEXAS CHILI

 

"This is the chili I serve at my annual chili dinner. It's direct from "The Frugal Gourmet Cooks American." You'll probably want to cut back on the jalapenos, especially the first time you make the recipe. The author insists that "genuine" Texas chili is made without beans but you can add a can of kidney beans if you like."

Cincinnati Chili [Authentic!]
The Frugal Gourmet Cooks American
by Jeff Smith, © 1987 Frugal Gourmet, Inc.
 

2 tablespoons peanut oil
1 pound lean pork, coarsely ground
1 pound hamburger
4 yellow onions, peeled and chopped
6 cloves garlic, peeled and finely chopped
1 tablespoon whole cumin seeds
4 tablespoons hot chili powder (commercial)
3 whole bay leaves
2 teaspoons cinnamon
2 teaspoons allspice
2 teaspoons Tabasco
4 tablespoons [unsweetened] cocoa powder
2 tablespoons Worcestershire
4 tablespoons white vinegar
1 can (28 ounces) tomatoes, puréed
1 tablespoon oregano
2 pounds kidney beans, soaked and cooked *
Salt to taste

 

Heat a 12-quart heavy stockpot and add the oil. Sauté the pork, hamburger, onions, garlic, cumin seeds, chili powder, and bay leaves until the meat is barely browned and the onions clear. Drain the fat and discard.
Add the remaining ingredients, including the beans, and bring to a simmer. Cook, covered, for 1 1/2 hours or until the beans are tender. You may need to add water [or stock] to this dish as it cooks.
Now, you must decide is you are to have it one, two, three, four, five way.

* On preparing cooked beans for chili with beans
Chili with beans has a much better flavor if you use dried beans and cook them yourself rather than using canned beans. Simply soak the needed amount of red kidney or other [such as pinto] beans in ample water over- night. Then simmer until tender overnight. [Do not add salt until after the beans are cooked, or the skins will be tough,] The beans are then drained and added to the chili. Cook the beans in the chili sauce and simmer for 1 to 1 1/2 more hours.

@shoekitty   We have the book entitled "the Frugal Gourmet". If your recipe is in this book let me know so I can post the recipe for you.  My husband loves to cook, he reaches for this one a lot - and we have MANY cookbooks.

If you google "chili bean recipe from frugal gourmet" there are two videos on You Tube that come up with him preparing the recipe.

I have a hint.  I think dried onions (the little chopped pieces not the powder or granules) work better in chili than fresh onion.  The fresh onion seems to just get watery and lose flavor, but the little dried pieces seem to give more subtle onion flavor to the chili.

 

Try it and see what you think!  I started using them after I thought they worked well in the 2-Alarm Chili flavoring packages.

@shoekitty Thank you for mentioning Jeff Smith. 

When we were first married (ions ago) my husband and I had both sides of our families for every holiday dinner.

 

I always made a Spinach Artichoke recipe by Jeff Smith. 

The past couple of years we seem to be gone on trips and with deaths and divorces the families are all scattered. So we no longer host the big meals. But with holidays coming up, I am going to make the Spinach and Artichoke dish. I can not wait. I like it so much and haven't had it for a number of years.

Hank you so much for the info. I appreciate it, and @Nightowlz   Thank you this is it,  I remember I didn't use pork or beef we used ground chicken thigh, I grind it myself course ground in my kitchenaid stand mixer attachment.  I also cut recipe a bit as this is a tub full, lol! This chili has so much depth, I think it is the cocoa...not sure but the color and flavor is wonderful. I am going to try this next week. Thank you thank you!

Shoeotty said,   Jeff Smiths recipes were always tried and true.  I had luck with everything I cooked. I made that dip too.  Back in late 80's , early 90's.  It was not over done then, it was like a new thing. My daughter makes that to this day. It is,sort of her dish to bring
