This recipe sounds a little strange but it is really delicious. My daughter requests it when she comes to visit and I sometimes make it for dinner.
2 small yams or sweet potatoes (I use garnet yams)
olive oil
1 small bag prewashed spinach
1-2 cloves garlic, diced
1 lemon
2 eggs
salt and pepper
Wash, peel and shred potatoes. Lightly salt and drizzle enough olive oil to fully coat so they stick together. Form round patties in your hands (2 each per potato) Place patties in a preheated medium-high skillet with enough olive oil so potatoes will not stick. Cook 3 to 5 minutes on each side until crispy. Keep warm in 250 oven.
Add spinach and garlic to same pan (add more oil if needed) dash of salt and pepper. Saute until spinach is wilted.
Meanwhile poach two eggs (best with yolks on the running side).
Place two sweet potato rounds on each plate. Top with cooked spinach mixture. Make a cradle for the egg. Add a squeeze of fresh lemon. Place egg on top. Salt and pepper to taste. When yolk is broken it creates a sauce over the spinach and potato round.
This makes two servings so go up from there. If I am only making it for myself I do not bother keeping potatoes warm in oven because it goes so fast.
