Grilled Veggies

3 T olive oil
2 T red wine vinegar
2 t. Dijon mustard
1/4 t. salt
1/4 t. pepper
1 clove garlic, pressed
Squash; zucchini, yellow, etc. Sliced lengthwise
Vinaigrette:
In a small bowl, with a wire whisk, mix olive oil, vinegar, mustard, salt, pepper and garlic.
Brush one side of each veggie slice with some vinaigrette.
Place veggies on grill over med. heat and cook, turning once, and brushing with the remaining vinaigrette until veggies are browned and tender, about 10 minutes. Transfer to a large platter as they are done. Sprinkle with chopped fresh mint and crumbled feta cheese if desired.
