Grilled Pork Tenderloin with Cherry Salsa

I need to preface this by admitting neither DH nor I care a lot for cilantro. We loved this dish tonight, though.  I halved the recipe and served it with baked sweet potatoes, warm French bread and a bottle of Cantina Zaccagnini Pinot Grigio 2012. DH called it a 4.5 ☆ meal (he doesn't believe in perfect meals Woman Tongue).  

 

Grilled Pork Tenderloin with Cherry Salsa

 

1 cup coarsely chopped fresh cilantro, divided
1/2 cup minced shallots, divided
6 Tablespoons fresh lime juice, divided
1/4 cup vegetable oil
2 pork tenderloins, about 2 1/2 pounds total
1/2 pound fresh cherries, stemmed, pitted,halved
1 fresh Fresno chile, red jalapeño, or Holland chile, thinly             sliced crosswise
1 Tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper

 

Prepare a grill to medium-high heat. Combine 1/2 cup cilantro, 1/4 cup minced shallots, 4 tablespoons lime juice, and vegetable oil in a resealable plastic bag. Add pork; seal bag and turn to coat. Marinate at room temperature for 15 minutes, turning occasionally.

 

Meanwhile, combine remaining 1/2 cup cilantro, 1/4 cup shallots, 2 tablespoons lime juice, cherries, chile, and olive oil in a medium bowl. Season salsa lightly with salt and pepper and set aside to let flavors to meld.

 

Remove tenderloins from marinade and season generously with salt and pepper.

 

Grill tenderloins, turning frequently, until a thermometer inserted into meat registers 145°F, about 15 minutes. Let rest 10 minutes. Cut into thin slices and serve with salsa.

Wow!  Sounds good.  The cherries have been plentiful lately and I'd never considered making a "salsa" with them.  Thanks for the idea.

Thanks for posting. I will try this soon. I have been searching for a different way to do a pork tenderloin in the last week, so this is perfect timing.

I'm not trying to be vague, but I'd have to say according to your taste.  Mine were not super tart, but the balance and combination of flavors was really interesting.   As I said before, neither DH nor I are fans of cilantro (we're in the "tastes like soap" group), but upon first taste of this salsa, we each were hooked.

May I whistle for #2, #3 & #5?  Is that too much work to ask for?  #3 is at the top of my list.

NO rush, just when you have time....I would love to have those!

No problem, ChiliPepper, I'll get 'em posted after I send this.  Thanks for the compliment!  I've searched out and collected what I considered to be good recipes all my life (over 50 years).  I'm happy to share any / all of them, although I sometimes feel they're considered too time consuming by a lot of today's cooks.
