Ingredients

    •  

2 cups sour cream

  • 4 oz diced fire roasted green chiles
  • 3 cups cooked rice
  • 8 oz Pepper Jack cheese shredded
  • 2 oz cheddar cheese shredded
  • garnish with cilantro, parsley or jalapenos optional
Instructions
  • Preheat oven to 350F.
  • Lightly spray an 8-in square casserole dish with cooking spray, 
  • Combine sour cream and diced green chiles in a small bowl. Set aside.
  • Spoon 1 cup of rice into the bottom of the casserole dish.
  •  
Spread one-third of the sour cream mixture on top of the rice.
  • Top with one-third of the shredded pepper jack cheese.
  • Repeat layers two more times.
  • Cover with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes.

There's a BBQ joint we usually have our final dinner before returning home from our annual ski trip that has green chile cheese grits.  It uses a diffrent cheese though.  I thought it odd being that it's in MT.

Looks good.  Cooked chicken or pork could turn it into an entree.

@Kachina624  Yes love green Chile... just took some out of the freezer that we roasted this past summer.  Walmart had cases of Hatch for $10.00... great price but they weren't roasting.  DH had them roasted in a couple hours.  

DH would love this recipe.  I eat plant based so I wouldn't be eating the sour cream or cheese.. I do make a plant based feta that might sub for the cheeses...I may have to play around with this.
