I am making frequently this soup, as I do recall often my mom when she used to prepare it for me when I was a child.

It sounds really good.I like that the creaminess comes from egg and not a fatty cream.

I make this avgolemono recipe:

 

1 1/2 lb boneless, skinless chicken breasts

Strips of lemon zest from 3 lemons

6 tbsp lemon juice

1 tsp dried dill

2 tsp coriander seeds

1 tsp peppercorns

1 peeled and smashed clove of garlic

8 cups chicken broth

1 cup rice

2 eggs

2 egg yolks

 

Cut chicken in half lengthwise and toss with 1 3/4 tsp salt.  Let sit at room temperature for 1/2 hour.  Bundle zest, dill, coriander, peppercorns, and garlic in triple thickness of cheesecloth and tie with twine.

Bring broth, rice, and spice bundle to boil in big pot over high heat.  Cover and cook over low heat for 5 minutes.  Add chicken, cover, and let stand off heat for 15 minutes.

Shred chicken into bite-sized pieces.  Process 1 cup cooked rice, lemon juice, eggs, and yolks in blender until smooth.

Return chicken to pot and bring soup to simmer over high heat.  Mix in egg mixture off heat.

Thanks for posting.  This is such an easy preparation.  I always add garlic, onion and oregano when I make this soup.

The is a small but great Greek restaurant close to where I live, we ordered dinner in from them tonight.

Avgoloemono soup

Hummus with lots of pita

Chicken Souvalaki with lemon potatoes

 

Best part I have left overs for lunch tomorrow
