Great Day for Slowcooker SAUSAGE, SPINACH and WHITE BEAN SOUP!

Today's a cool fall day here in NJ, so decided to make a pot of slowcooker Sausage, Spinach and White Bean Soup.  In a hurry, no problem just make it on the stove and simmer until the veggies are cooked about an hour an a half.  Otherwise, this is a great soup to throw into the slowcooker.  Here's the directions for anyone who might want to give this soup a try.  Having Sourdough bread with it, but my son will want a sourdough grilled cheese with it.

 

SAUSAGE, SPINACH AND WHITE BEAN SOUP 

 

  • 1 tablespoon olive oil
  •  About a one pound package smoked andouille sausage, thinly sliced OR kielbasa or other smoked sausage
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 2 celery ribs, diced
  • 2 (15-ounce) cans Great Northern beans, drained and rinsed
  • 3/4 teaspoon dried oregano
  • 2 bay leaves
  • 8 cups chicken broth
  • Kosher salt and freshly ground black pepper, to taste
  • 3 cups fresh baby spinach (I always add more)
  • ½ cup shaved Parmesan or more
  • (*If you want it more hearty, add some cooked small pasta to each bowl before serving.)

  • Heat olive oil in a large cast iron skillet over medium high heat. Add sausage, and cook, stirring frequently, until lightly browned, about 3-4 minutes.
  • Place sausage, garlic, onion, carrots, celery, beans, oregano and bay leaves into a 6-qt slow cooker; season with salt and pepper, to taste.
  • Stir in chicken broth. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
  • Stir in spinach until wilted.
  • Serve immediately, topped with Parmesan

@ciao_bella  That looks amazingly delicious.  It's cool here too 😫 so I'm making shrimp Mozambique today.  It's a WFH day and I can start dinner early.  We will have it with crusty bread to sop up the sauce and a Caesar salad.  Yum!

I make a similar recipe with only 1 can of beans, and the addition of a 29-oz can diced tomatoes and 1 1/2 cups shell pasta.  It's a hearty soup.

@ciao_bella   Thank you for the recipe.  I looks delicious.  Today was a baking day for me.  The grandkids requested Apple Crisp so I made two .   The house smells great.  🤗

I make the same soup for DH!  It's one of his favorites.  I like to use Italian sausage broken up out of the casing and generally cook mine in a pot on the stove on low.  It is delicious........now I'm going to have to make some Smiley Happy

Thanks @ciao_bella This recipe looks so good just copied it  as the weather seems to be coming in cooler finally  it's soup weather . I  like to use my slow cooker for hearty soups,and this looks like something my husband and I would really enjoy..

I made this last week, it was very good thank you for the recipe.  I did use dried beans and didn't add the celery and carrots, forgot to buy them.  I added orzo also.
