Grape-Nuts Oatmeal Cranberry Walnut Cookies

I posted this on our exercise thread in Wellness, but wanted to post it here for anyone looking for a different unique and easy cookie for the holidays (you will get requests for more or the recipe Smiley Happy

I love these cookies and I love to make them for anyone, for holidays or just to bake them. I get requests for these from my surfer son, my friends to bring on trips and for the holidays. Enjoy! (I one replaced the margarine for butter and imatation vanilla for real vanilla and they were much too rich for me - so I stick with the recipe as per below)

Grape-Nut Oatmeal Cranberry Walnut Cookies

Directions:

  1. Preheat oven to 375°F.
  2. Mix flour, baking soda and salt in small bowl.
  3. Beat margarine in large bowl with electric mixer on medium speed to soften.
  4. Gradually add sugars, beating until light and fluffy.
  5. Beat in egg and vanilla.
  6. Gradually add flour mixture, beating well after each addition.
  7. Stir in grape-nuts, oats,cranberries and walnuts.
  8. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
  9. Bake 10-13 minutes or until lightly browned. (Depending on your oven, sometimes I need to go to 13)
  10. Cool 1 minute; remove from cookie sheets.
  11. Cool completely on wire racks.
