Grandma's MAGIC CAKE with variations..

Hi ladies..I had this cake at my sister's house last week. She made it with a fruit layer of blueberries and it was delicious! This cake separates by itself into three distinct layers; bottom denser layer, middle custard layer and top cake layer. The blueberries in my sister's cake rose to the top. After the cake cooled, she dusted it with a little powdered sugar. Delicious!

GRANDMA'S MAGIC CAKE (Will divide into 3 separate layers; bottom layer, custard layer and cake layer)

4 eggs, separated (add 4 drops white vinegar to whites)

1Tbsp. Water

1/2 c + 2 Tbsp. sugar

1 stick butter, melted

2 c milk, luke warm

2 tsp. vanilla

1. Mix egg whites with 4 drops of white vinegar until stiff.

2. In another bowl, beat egg yolks with sugar, water, and vanilla. Add melted butter.

3. Add warm milk to egg yolk mixture and mix thoroughly

4. Gently fold in egg whites.

5. Pour batter into an 8 x 8" baking dish

6. Bake in a preheated oven 325 degrees F for 60 minutes or until top is golden.

7. Sprinkle top with confectioner's sugar when cool.

Magic Cake with Fruit

Add 1/2 tsp. grated lemon zest and enough fruit to cover the bottom of the baking dish.

Dust with a bit of flour to cover the fruit.

Pour the Magic Cake Batter over the top of the fruit.

Magic Cake (Chocolate)

Add the following ingredients to the Magic Cake Batter

1/2 c cocoa.

2 Tbsp. strong coffee

1 Tbsp. rum

Thanks for posting! I've been meaning to try a 'magic' cake! I have never had one but heard here they are delicious!

I like making special treats on weekends and I can't wait to try this....too many desserts and a body that shows them all....oh well-blueberries are rich in antioxidants, right?!! Poodlepet

This sounds interesting...is there a fruit that wouldn't be recommended? I'm thinking peaches!!!

Thanks for sharing. I have never heard of it. Of course the chocolate sounds delish but so does the fruit. Like dionline posted above using peaches sounds yummy. I have lots of fresh peaches. We have bought 4 cases of peaches this season. Will probably buy our last case next weekend since they won't be available after that until next July.

There's no flour. Is that the magic part? It does sound more like a custard. I don't see how it could be cake like without flour. I want one!
