Somehow my husband came home with a sealed wedge of over 2 pounds of Gouda cheese.

I looked up recipes and most recipes use at most 4 ozs of Gouda cheese.

It will take forever to use up the wedge. And once I break the vacumn seal I don't know how long the cheese will remain good.

Could I make macaroni and cheese with only using gouda? All the recipes, I saw, call for a combination of cheeses. None that I saw used only Gouda. Would it work to use only Gouda, in the macaroni and cheese?

Sure, why not?  im sure it will be delicious.  You can also freeze it.  Id cut it into chunks and freeze indiviually.  4 or 8 oz packages.  No waste

What to Use Gouda For? Gouda is a great melting cheese; Often used in homemade macaroni and cheese. It works well on any cheese board, compiled with other cheeses. You can use Gouda in a lot of dishes including cheese based soups, smoked gouda mashed potatoes, grilled cheese sandwiches and in fondue.

I would use a couple cups of it shredded in au gratin potatoes.

When you open it, cut it into 4 oz portions and freeze.  Cheese freezes fine. I love gouda.  It's soo goud.  Lol

I'm making Mac & Cheese for dinner tomorrow (Christmas Eve), and I have a wedge of it in the freezer that I will shred and add to the mix. Smiley Wink

I knew I could count on you, Ladies.

I am so excitied. We had planned on mashed potatoes for Christmas meal. I will add some Gouda to the potatoes. And make a batch of Gouda macaron and cheesei tonight for dinner.

And cut up the rest into 4 oz chunk and freeze them.

I appreciate your thoughts. I feel like all your solutions will work out well. Thank you.
