Although it is delicious, I hesitate sharing this one. It is posted on The Chew's website, and, like several of their online recipes, has an error in it.
PLEASE NOTE: As it is written, this recipe produces two 9" loaves. The directions will tell you to prepare one pan, but, believe me, you will never get all the batter into just one pan. The amounts for the fillings, the cranberry compote and the lemon cream, will give you enough for both loaves.
So, OK, here goes. For Carla Hall's Gingerbread Sandwiches go to:

My notes: Chef Hall was adamant that the sandwiches would be best if wrapped tightly and refrigerated for 2 or 3 days to ripen.
I split my gingerbread loaf horizontally into three layers, spreading the cranberry compote on one, the lemon cream on the other, re-stacked the layers, putting the top back on. I wrapped the reassembled loaf in foil and refrigerated it overnight. We had nearly half a loaf with coffee for breakfast this morning, and look forward to seeing how the other loaf ripens, if it makes it that long.
