I saw this recipe on The Chew last week and as we had family staying for the weekend I decided to try it for breakfast today. It was absolutely delicious.

First you make a ginger simple syrup, I did this on friday so I would be prepared ahead of time.

Heat 1/2 cup of water with 1/2 cup of sugar til sugar is dissolved. Add several slices of fresh ginger and bring back to a simmer. Remove from the heat and let steep for one hour then remove the ginger. I then stored it in a small lock & lock in the fridge til this morning.

When ready to serve add 1/4 cup of the ginger syrup into a large bowl. Add the zest and juice of a lime and some chopped fresh mint.( Just a few leaves.)

I used 1/2 a honeydew scooped into balls.

Bunch of red grapes and 1/2 a fresh pineapple chunked.

Mix well together and let sit for about 20 minutes to absorb flavors.

It was lovely and refreshing and something different.

Will definitely be making again and again this summer.
