This is the recipe that I used for many neighbor gifts this year and it will be used in th future also. Hope all enjoy it as much as I do. {#emotions_dlg.thumbup}

1/2 cup butter-softened

1 cup sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 teaspoon soda

1/2 teaspoon salt

1 cup mashed ripe bananas

1 can (11 Oz.) mandarin oranges-drained

1 cup coconut

1 cup chocolate chips

2/3 sliced almonds-divided

1/2 cup chopped maraschino cherries

1/2 cup chopped dates

In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, soda and salt; add to the creamed mixture alternately with the mashed bananas. Stir in the oranges, coconut chocolate chips, 1/2 cup almonds, cherries and dates.

Pour into 2 greased loaf pans. Sprinkle with remaining almonds. Bake at 350 degress for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to racks to cool completely.

*I usually do not use the chocolate chips but use more of the dates and cherries. (1/4 cup more of each.) I use only 1/2 cup almonds for each recipe which I put most of them in the batter and then a few for sprinkling on top. I also cut the oranges in half.
