 I think I have posted this before but I made this last night and it is a change from the usual soups.  I was ready for something different.

 

‎2 T sesame seeds

2 T oil 1 pound ground pork (not sausage)

1/4 cup finely chopped sour pickles (cornichons or dills)

Peanut Sauce (see below)

6 cups chicken broth

1 pkg fresh fettuccine (8-9oz) (cut into smaller pieces)

2 cups chopped green onions

1/4 cup finely chopped roasted salted peanuts

Thin green onion slivers

 

In a large pan over medium heat stir sesame seeds until lightly toasted. Remove and set aside.

Add oil and ground pork to pan. Stir over high heat until meat is crumbled and lightly browned. Mix pickles and peanut sauce with meat. Add broth and cover pan. When mixture is boiling uncover and add fettuccine. Stir to separate pasta. Simmer until pasta is tender (about 3 minutes). Stir in chopped green onions. Ladle into bowls. Sprinkle with sesame seed, peanuts and green onion slivers.

 

PEANUT SAUCE: In a bowl combine 4 T peanut butter, 5 T soy sauce, 3 T toasted sesame oil, 3 T sugar, 3 T rice vinegar and 1 t hot chili flakes.

You had me till I saw pickles.That sounds very unusual...do you think that the soup could use vinegar instead?

I don't think I would put vinegar in it.  You could just leave the pickles out.

We made this today, with a few (ahem) modifications due to being snowed in and not eating certain foods. I bolded the changes/omissions.  It was delicious!Cat Very Happy

I also added:

matchstix carrots

broccoli slaw

1/2 minced white onion

2 cloves of garlic

 

I think it would be good with shrimp or tofu, julienne red peppers, or beans sprouts at the end.Cat Happy

DiAnne, thank you for posting this recipe. How fun! What did you think of the pickles? Was their flavor strong or overpowering?

I used cornichons and there is only 1/4 cup so they are not over powering at all.
