GREEN BEANS w/ CARAMELIZED SWEET ONION

GREEN BEANS WITH CARAMELIZED ONION

4 servings

 

1 lb. fresh green beans

2  medium-sized sweet onions (Vidalia if available), halved and thinly sliced

2 tablespoons butter

2 tablespoons brown sugar

1-2 teaspoon balsamic vinegar (optional)

Cook fresh beans in boiling water to cover for 15 minutes, drain.  Chill overnight, if desired.

 

Cook onion in nonstick skillet over medium-high heat without stirring for 8-10 minutes. Then cook, stirring often, for 5-10 minutes or until golden brown.

 

Reduce heat to medium, stir in butter and brown sugar. 

 

Add green beans, cook 5 minutes or until thoroughly heated.

 

Toss with vinegar if desired.

These are so good as I cook them like this all the time.  I vary it though with/without the brown sugar and balsamic, depends on my mood.

I make Brussel sprouts this way.  I think I'll try it with green beans next time.  Yum.

Looks delicious!  If I can get the time to do fresh green beans!
