GREEN BEANS WITH ALMONDS AND SMOKED PAPRIKA

Always looking for new ways to eat veggies....

12 oz green beans, trimmed
2 t olive oil
2 shallots, finely sliced
1 t light brown sugar
1/4 cup sliced almonds
1/2 t smoked paprika
1/4 t salt

Blanch green beans in boiling water until just tender (4-5 minutes). Drain and shock in ice water.

Heat oil over medium heat in large skillet. Add shallots and cook, stirring until golden. Stir in sugar - cook 1 minute. Stir in almonds, beans, paprika and salt. Cook stirring until heated through.

Serves 4
