A side dish that is a little different.
4 large Yukon Gold potatoes, sliced crosswise into 1/2 inch rounds
1 large lemon, juice and zest
1 T olive oil
1-1/2 T fresh oregano leaves, chopped
3 cloves garlic, minced
1 t salt
2/3 cup crumbled feta cheese
Pre-heat oven to 450. Butter a 9 x 13 inch baking dish.
In a large bowl, toss potato slices with lemon juice, zest, olive oil, oregano, garlic and salt. Layer slices in baking dish.
Pour 1 cup boiling water over the potatoes and bake, uncovered, until most of the water has evaporated and potatoes are tender (about 30 minutes). Top with feta and bake until golden brown (about 15 minutes).
