I love them. Last night I had a baked sweet potato and chicken for dinner. I add them to soups. Last summer I made a raw sweet potato salad that everyone liked.

Taters! Taters, my love!
Sweets are so good.
Love the organic Japanese Sweet Potato shown in the OP.
Also the organic Hannah Sweet Potato has a nice taste.
Worth the price.
Sweet Potatoes are pretty much identical to a simple Russet
for benefits of calories/fiber/vitamin/minerals. Only difference is
in the Potassium vs Vitamin A, but either way, they should BOTH
be in the daily diet for healthy gut flora!

If you want to incorporate sweet potatoes for dessert,
try a sweet potato chocolate pudding:
1 cooked skinned sweet potato
1 cup plant-based milk
3 T dark chocolate cocoa powder
1 dropper Stevia
Blend to smooth. Refrigerate.
It really makes a lot.
So rich & creamy, but you could eat it for breakfast!
Try stirring some into your oatmeal for chocolate oats,
or even add mint for a chocolate mint dessert with coffee.
All that w/ the simple sweet spud.

I keep hearing about this but have not tried it. It seems like it would mess up the toaster?

The benefits of sweet potatoes, better for you than white potatoes:
1. High in antioxidants.
2. High in vitamin A
3. Gives us a beta-carotene boost
4. Easy Prep
5. Cancer fighting compounds
6. "Sweet potatoes are rich in vitamin C, which revs up your immune system. High potassium levels help control blood pressure, while calcium bolsters your bones."
7. Re: Sugar... "White potatoes, the ones you normally eat baked or as french fries, rank high on the glycemic index, which measures how quickly food affects your blood sugar. Sweet potatoes rate lower. They also have more fiber -- about 5 grams in a 3/4 cup serving -- which slows digestion and keeps you feeling fuller longer."
8. If you’re trying to trim down, they’re stuffed with filling fiber. White potatoes have their assets -- both tater types are fat-free -- but the sweet ones have slightly fewer calories and carbs.
9. Sweet potatoes are a good source of iron.

I had the same thought, and sweet potatoes can get gooey.
I would imagine you could get the same effect baking a slice in the oven and flipping it over to get both sides done.
