Picked up a box of Grape Nuts cereal on sale.  The checkout girl kept telling me how delicious grape nut pudding is.  Never had it but she made it sound so good, I'd like to make it.  Anyone have a recipe to  share?

Grapenut Pudding (made in microwave)

2 c Grapenut Cereal

5 c milk

4 eggs

1 c sugar

2 t vanilla extract

1 dash salt

cinnamon to taste

Combine Grapenuts & 1 c milk in 2-qt microwavable container & set aside. In separate bowl, combine remaining milk, eggs, sugar, vanilla & salt. Add to Grapenuts/milk mixture & top w/cinnamon to your taste.

Heat in microwave on high setting for 10 minutes, stopping every 2 minutes to stir. Heat at medium setting for an additional 4-6 minutes. (Heating time does vary by microwave & desired consistency - heating a little longer yields a thicker concsitency.)

Originally from New England, this has been a favorite of mine for many years! I like it the consistency of a custard pie.
