GARLIC BAKED PORK TENDERLOIN

I'm still working on my NYE menu - a grouping of finger foods that will include shrimp cocktail and the cheese pepper dip recipe that I posted yesterday. 

 

Thinking about this baked pork tenderloin recipe for New Year's Day - something easy with either mashed or roast potatoes and green beans.

 

GARLIC BAKED PORK TENDERLOIN

Delicious easy melt in your mouth tender pork tenderloin baked to perfection in a buttery garlic sauce.


PREP TIME. 5
 minutes
COOKING TIME. 30 minutes
 

INGREDIENTS

  • 1 bottle Italian Salad Dressing (optional marinade)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp sea salt and fresh cracked pepper
  • 2 lb pork tenderloin
  • 4 tbsp butter, sliced into 4-6 pats
  • 2 tbsp diced garlic
  • 1 tsp dried basil*
  • 1 tsp dried oregano*
  • 1 tsp dried thyme*
  • 1 tsp dried parsley*
  • 1/2 tsp dried sage*
  • *OR 2 tbsp Italian Herb Seasoning Blend

INSTRUCTIONS

  1. (Optional) Place pork tenderloin in a Ziplock bag or bowl and cover in the Italian Dressing, marinate for 12-24 hours.
  2. Preheat oven to 375 degrees.
  3. Line baking sheet with aluminum foil.
  4. In a small bowl, combine garlic, basil, oregano, thyme, parsley, and sage. Set aside.
  5. Generously season meat with salt and pepper.
  6. In a large pan, heat oil until shimmery.
  7. Add meat to pan and cook on all sides until dark golden brown.
  8. Transfer to baking sheet.
  9. Generously coat with herb mix.
  10. Place pats of butter on top of the pork.
  11. Wrap in foil, bake until meat is 145 degrees internally at the widest, thickest part of the tenderloin (about 25 minutes.)
  12. When pork has come to temperature, remove and let rest, tented with foil, for at least five minutes to lock in juices.
  13. Slice against the grain and serve immediately.
  14. To store leftovers, place in an airtight container and keep in refrigerator for up to three days.
  15. To freeze leftovers, place in a plastic bag or wrap in plastic wrap and keep in freezer for up to three months.
  16. To reheat, let thaw naturally in the refrigerator overnight, and bake at 350, wrapped in foil, until piping hot when ready to serve.

The photo of the recipe you posted makes the pork look delicious.  Have you,cooked this yourself?  Your rating?  It seems like it would be a quick recipe to prepare.  It just needs a couple of good side dishes and a yummy dessert. Oh, and wine.  A good white wine.  Oh, and bread..good soft bread.  Then a nap!

@maximillian - I have not made this recipe but most likely will on Sunday. Wrapping the tenderloin in foil with butter will keep it moist and produce some juices/gravy

 

This is also a nice option for a single person or a couple bc you can freeze leftovers. I like your suggestions for sides, Wine & nap 😉

 

I found another pork recipe that I've bookmarked and will post - a slow cooker recipe that looks really yummy

@Lilysmom1 & all - this recipe turned out great! Used an instant read thermometer to check temperature bc I didn't want ti over cook it. 

I will use this cooking method again with other marinade/seasonings.
