@jlkz   I just checked out the iced upside down cupcakes, I think that is a great idea and I'm going to try making some.

I don't invert the bottom layer - instead, I shave a little off to even it out, but I almost always invert the top layer.  It creates a professional looking shape and it's easier to frost.

My great-grandmother was a professional baker, owned a bakery in Brooklyn, and she always frosted her cakes upside down as well.  As did my grandmother after her.
