That's true. The main veggies I like for vegetable soup are high in carbs (peas, carrots, corn & potatoes). Plus, I like to add Quinoa or barley. I try to lower the amounts of the higher carb veggies and add in a little broccoli which I'm not fond of. I can handle a little broccoli in a spoonful mixed with other things. I also like to load up with cauliflower. My mom always threw in shredden cabbage. I'm not all that fond of cabbage either but I may try it the next time I make vegetable soup.
