Fried Rice

3 cups rice...NOT minute rice

2 eggs

1/4 teaspoon salt

1 tablespoon oil

8 slices bacon...cut up

4 green onions...chopped

3/4 cup water chestnuts...diced

1/2 cup frozen peas

dash of sugar

pinch of garlic powder

soy sauce to taste

Cook rice. Drain and rinse. Set aside to cool. In a small bowl, beat eggs with salt. I n a skillet, heat oil. Add eggs and cook. Stir frequently til set. Cut into small pieces and set aside. In a 10 inch skillet, cook bacon til brown and crisp. Drain on paper towels. Crumble. Discard all but 2 tablespoons bacon drippings. Add green onions, water chestnuts, frozen peas, sugar and garlic powder. Stir frequently for one minute til well coated. Separate grains of cooked rice with a fork and then add green onion mixture and stir fry til heated through. Add cooked egg, crisp bacon and soy sauce. Mix well and heat through.
