Fried Rice

(Rice must be cooked ahead and cooled in refrig.)

1.5 cups Rice (I use Uncle Bens)

3 c water

1 t salt

1 bunch of green onions, chopped

a little grated carrot for color

2 eggs, scrambled and cooked

1 pound of Boneless pork chops, cut in small pieces, cooked

Soy Sauce to taste

Put the rice, salt and water in a 3 qt. saucepan, stir once and bring to a boil, cover,cut down the heat to a simmer and cook for 25 min. DO NO STIR!! Let the water cook out and put the rice in a pan to cool. Put in the refig until completely cold.

Cook the porkchops until done, set aside. Cook the eggs and set aside.

In the biggest pan you have, I use my Everyday pan, put a lillte oil and heat up. Add the rice, breaking it up as you add it. Add the cooked meat, eggs, green onions and carrots. Stir and just cook til rice is hot. Add soy sauce to taste. Serve hot. Makes alot!!!
