When, and if, you tire of having corn on the cob, here is a recipe for another good way to serve fresh corn.

Fried Fresh Corn with Okra

12 ears corn, husked
9 strips bacon
2 medium onions, sliced
1 jar (6 oz.) pimentos, drained and cut in strips
1 pkg. (10 oz.) frozen cut okra or 1 can (8 oz.) okra, drained
1/4 tsp. each onion, salt, garlic salt, and black pepper, or to taste

Cut fresh corn from the cobs, scraping off milky flesh. (For a creamier texture, run knife down center of each row of kernels before cutting). Set aside.
In a large skillet, fry bacon. Remove and set aside.
Add corn to bacon drippings; stir over high heat until lightly brown. Cover and continue cooking, stirring occasionally until a low "popping" sound is heard. Stir in the onions, pimentos, and okra.
Cover and stir occasionally; cook over medium heat for 30 minutes. Stir in the seasonings; cover and cook 20 minutes more. Adjust any seasoning to taste. Garnish with the bacon.
Makes 4 servings.
