Fresh Summer Bean Salad
(recipe source: photosandfood.ca)

This is my new go-to summer dish. It's great for BBQ's, Picnics and just about any time. It's so fresh, crunchy and citrusy. It couldn't be easier. You'll love it.


1/2 cup Olive Oil
1 clove garlic minced
1/4 cup fresh squeezed lemon juice
1 tsp salt
1/2 tsp freshly ground black pepper
1 1/2 tbs brown sugar
1/2 tsp crushed hot red pepper flakes
1 tsp chili powder
1/2 cup white wine vinegar
1 can red kidney beans, rinsed and drained (19 fl oz)
1 can white kidney beans, rinsed and drained (19 fl oz)
1 can black beans, rinsed and drained (19 fl oz)
1 red bell pepper diced
1 orange bell pepper diced
1 green bell pepper diced
1-2 jalapeno pepper - seeded and diced
1/2 red onion diced
1 cup of frozen corn niblets ( I omited the and added a cup of diced cucumber, patted dry.)
1/2 cup parsley or cilantro, finely chopped

In a medium bowl, whisk together the olive oil, garlic, lemon juice, salt, black pepper, sugar, pepper flakes, chili powder and white wine vinegar. In a large bowl, add all the remaining ingredients. Pour in the dressing. Gently mix all the ingredients. Refrigerate or serve immediately.

That's a lot of beans!   I may try it, leaving out chili powder and jalapeno peppers.

I agree, that IS a lot of salad for just me also but I decided to make a half recipe of LoLa's salad & use the other half of the beans & other ingredients to make a chili.

 

That way nothing gets wasted & I can have several meals out of the ingredients.

 

If you look at the ingredients, most of them would go in a chili if cooked.

This sounded so good I made it for dinner yesterday.  Well.... DH loved it so much he had it for lunch with a  today. 

I had wanted to have it with dinner again so I made some spiral pasta and mixed it with what was left and it made a great pasta salad!

I didn't use the hot peppers, but did add 2 stalks of diced celery and about a cup of edemamme for crunch & protein.  Next time I will make a double recipe and whatever is left over I'll just throw it in a pot of chili.  Love this recipe!!
