Fresh asparagus means "welcome spring" to me! When they're in season, I try to eat some at least once a day since the season is so short. I like them in an omelette for breakfast, but my favorite is either air fried or roasted with olive oil & parmesan. I also like fresh baby green beans cooked with new potatoes and vidalia onions. For summer? Nothing tastes better than that first fresh tomato.

Definitely one of my faves too. We eat it at least once a week--I prefer the fat stalks--I peel them with a peeler then steam them, then saute them in olive oil and garlic and sprinkle a tiny bit of truffle salt as a finish---

I'm big on fresh green vegetables year round and eat something green everyday - roasted asparagus, broccoli, Brussels sprouts, and zucchini, sautéed spinach, steamed green beans. Spring mix and romaine straight from the fridge.

I could eat Broccoli every day! - (Steamed, raw, roasted, grilled, etc.)
I also love Spinach, Cabbage & Kale.
And yes, I'm the weirdo who actually loves Okra too.

I'm not a gardener and I don't think Green Beans are a spring vegetable but they're my favorite vegetable from a garden.

Vidalia onions. Years ago I used to visit the onion fields. In the hot spring days the sun beating down on the fields gave the air a delicious scent of baked onions. Some of the fields had stores that sold cook books, and all sorts of onion products. Of course the treat was to get a huge bag of onions from the fields. I don't know if the locals still own the farms. I haven't been to one in many years.

I prefer frozen asparagus! I get Woodstock's frozen organic and I saute in it in olive oil (or walnut oil) with garlic, sea salt and cracked pepper. OMGosh! Heavenly.
I would have a hard time picking my favorite vegetable!
Probably petite brussel sprouts.
No purple fingerling potatoes.
No mushrooms.
No seriously, cucumbers.
No make that .... Ugh, can't do it!

OK, @candys mine , you got me! I have to say rhubarb is not my favorite. I like it with strawberries in pies, and my grandparents had it growing all over the place. I've had it pickled. How do you like make it?
