This is not my recipe, my friend shared it on FB.

 

It is so good!

 

3 lbs onions

8 cups beef broth

2 TBLS unsalted butter

2 TBLS olive oils

2 sprigs of fresh thyme

1/4 of balsamic vinegar

4-6 baguette slices, toasted

grated Gruyere cheese( I use Jarlsberg)

 

Slice onions and place in crockpot with the butter and olive oil, salt and pepper.  Cook for 10 hours on low.  Then add the broth, vinegar, and thyme.  And cook for 8 hours.

 

Ladle into crock or oven proof bowl.  Top with toasted baguette and cheese, broil until cheese is melted and browned.

In the morning it will smell great!  Right now the cut onion eye burn is in the air!  DH does the slicing!

Your recipe sounds great and for years I've always made my own onion soup. I've just found Trader Joe's frozen onion soup and it is delicious. Quick too.

Low and slow cooking of the onions is KEY to a great Onion soup!

Question: how much Balsamic vinegar?  I don't use it much so not sure what would be  an appropriate guess.

Sorry, it's a 1/4 cup
