This was tonight's dinner. My husband doesn't care for thin crust, but I believe a thicker one would be overkill for the toppings.

French Onion Pizza

1 Tablespoon olive oil

2 large onions, thinly sliced

2 Tablespoons balsamic vinegar

1 thin-crust frozen pizza shell

½ cup grated Swiss cheese, such as Gruyère

2 Tablespoons grated Parmesan cheese

Heat oil in a heavy skillet over medium heat. Add onions and cook, stirring from time to time, until golden brown. Add balsamic vinegar and cook until the liquid evaporates. Season well with salt and a generous grinding of black pepper. Set onion mixture aside to cool for a few minutes.

Preheat oven to 400 degrees F. Spread the onions over the pizza shell. Sprinkle with cheeses.

Bake in hot oven until cheese melts, about 5 minutes.

My notes: I like onions, so used 3 large ones. Also used more cheese.

Serve with a salad.
