I've never used lemon juice when freezing peeled bananas.

If you freeze a banana, you won't want to use it on cereal anyway. Once frozen, it should be used as frozen for a smoothie. If you're making banana bread, a thawed formerly frozen banana will be a bit mushy. I just put the bananas in the freezer as is and peel as needed. The peel comes off easily.

Must they be peeled?

Oh, totally be sure to peel them! I learned the hard way that it's virtually impossible to remove the peel from a frozen banana!
What I did (the second time after learning that lesson!) is peel, cut into disks, then I froze them and THEN vacuum sealed each banana individually (I just fit the disks together to form the shape of a banana and vacuum sealed it that way.
I didn't put citrus juice on mine. I have to say that, for a very long time, they stayed very white but after a while they darkened a little. Most people who do this, however, probably don't leave them in the freezer for months or more, though.
I felt I had to vacuum seal them because, well, you guys know how I am! ![]()

Bananas do not need to be peeled first, but you must let them thaw before use if you leave them unpeeled. They can be thawed at room temperature or even in a large bowl of warm water. While I prefer peeling them first (so I can use them frozen in smoothies), leaving them unpeeled is very quick, does not required additional packaging, and is great if using in baked goods.

Once I freeze a banana, I use it as a treat like a popsicle, never in cereal.

I just freeze them in the peel and cut the peel off. My husband likes the bananas in cream of wheat.....ugh, I can't stand that stuff but he likes it, ha!

I freeze bananas all the time: peel them, cut them in chunks, put them on cookie sheet, put in freezer. When frozen, put them in freezer bags. No lemon juice needed.

Freeze them whole, them peel them when you are ready to use them, we used to use them in Banana bread. Freezing was perfect for when they were too ripe to eat. I don't think peeling first is necessary and I think the peel would protect them
