PEACHY SALSA PORK

2 lbs pork = loose ground or thin sliced up chops

1 packet taco seasoning mix

2T oil

16 oz jar salsa (I use mild Pace picante but you can use salsa if prefer)

6T peach preserves

hot, cooked rice

Cook rice as pkg. directs

Toss pork with seasoning mix - Brown in hot oil - drain off fat.

Stir salsa and preserves in to blend well.

SIMMER:- 15 minutes - partially covered.

Serve over the cooked rice.
