I had never used a PCooker in my life.  I got a 6 qt IP on Black Friday at wally.com....only $49.99 !

 

For that price, I thought I would give it a whirl!  I thought the instructions that came w/ it were weak, esp. for total newbies......so I have been looking online for ideas and recipes. 

 

I forgot all about Bob to tell you the truth!

 

There is a bit of a learning curve to this gizmo!

 

I just got a 7" cheesecake pan from Amazon.  I can't wait to try it!

 

We love cheesecakes and I make a lot of good ones...but I have to find ppl to help us eat it!  7" would be a perfect size.  A lot of articles swore that pressure cooker cheesecakes are fantastic.  We shall see!

 

Other wise, I need to learn how to decrease my 10-12" size recipes so I can make 2 people size cheesecakes!

Long ago, in the days of yore, I was about to start college and an elderly French-American neighbor lady of ours had a serious heart attack.  She asked if I would cook for her and her husband while she recovered.  I told her my mother was a good cook, I knew almost nothing about it.

 

That's fine, she said, "I will teach you."  Turns out, she wanted almost everything done in her pressure cooker, which had to be decades old.  It terrified me, made horrible noises, and I was afraid to touch it, but I did. As soon as she recovered, I was out of there and never touched a pressure cooker again until now Woman LOL

@Noel7 I have an Instant Pot, so naturally I'm interested. I made our corned beef the usual way on Saturday. I had to skim the scum for about 3/4 of an hour. How do you deal with the scum in an instant pot? Isn't there any scum?

I know what you mean, I didn’t see scum, I asked my daughter about that and she thinks it may be the meat we use now which is from Costco.   We used to get ours from Safeway and they had a lot of goo in the bag, the Costco meat doesn’t.

I followed Meredith's recipe for the pressure cooker.  It said 55 mins.  I had the exact size meat the recipe listed.  It was kinda tough.  I don't think 55 mins. was long enough.

 

I had two...the other I baked.  Fat side up, 1.75 hrs/lb. in a heavy duty foil tent.   It was FANTASTIC!  SO tender!

 

A previous poster Kacky, had posted this method a long time ago.  I then used a glaze of Apricot preserves, horseradish and dijon mustard.  Broiled for a few minutes more.

 

The baked won hands down with my guests. 

No contest actually!

 

I bought 2 more on sale yesty at Aldi's, but honestly, while the baked took longer...it was well worth the wait.  I'm afraid to take a chance trying the IP again since even on sale, those dang corned beefs are pricey!


I purchased my corned beef at Aldi's also, absolutely perfect !Woman Happy

Really like cooking in my Electric Pressure cooker, it's' like having a Mother cooking for me all over again. So far so good. The pressure came up in 9 minutes and I set it for the meat setting,that's 26 minutesWoman Very Happy and then for another 20, pressure again came up in 9 minutes, and then I added my little multi colored potato's and cabbage, and baby peeled carrots. Couldn't have been earsier. Corned Beef , and fixin's just wonderful.

Wow , This time I cooked my corned beef, and 3rd time I've used my electric pressure cooker, and very minute amount of yuck from the meat. Actually I have never purchased a corned beef form Aldi"s and it was the best ever. And I think I had very little problems also  I make a seasoning sachet with the little packet that comes in the brisket bag, I open it cut a square of cheese-cloth place that in a small bowl place the peppercorns on the cheese-cloth and then tie it with un-waxed dental floss and place it in the pressure cooker and when my dinner is complete I just fish it out, that way it's not all over everything making a mess on the meat and veggies. But as far as meat yuck very little amount in my cooker. Very much a happy camper amount my meat. Wished it wasn't as easy for the rest of you. Woman Very Happy

@Noel7 and @BeccaLou Thanks for answering my question about the scum. The corned beef I bought had pretty much liquid surrounding it, and I added that to the pot thinking it would help with the flavor. But, I'm thinking it helped create more scum.

I used to add that, too. I read we were supposed to.  I wouldn’t do it again.
