Fettuccine with Bacon & Vegetables

Fettuccine with Bacon & Vegetables

 

1/2 pound  (8 ounces) fettuccine egg noodles 

1 medium carrot - grated

2 stalks celery - diced fine

1/2 medium onion - diced fine

2 cloves garlic - minced

1 cup frozen peas

6 slices bacon.....diced and cooked near crisp

olive oil (about 1/4 cup)

Parmesan cheese...enough to your liking

1  1/4 Tablespoons butter

salt & pepper to taste

 

 Put large pot of salted water on to boil for pasta.

 

 Grate and chop the carrot, celery, onion, garlic. Put into bowl along with the frozen peas and set aside.

 

 In large frying pan, cook the diced bacon until nearly crisp, remove from pan and drain well on paper towel.

 

Drain bacon fat from pan, leaving just a little to coat the pan.

 

Add some olive oil to the pan and heat a few moments.

 

 Put garlic,chopped/grated veg and peas from bowl into frying pan and

stir fry until golden and softened....about 5- 8 minutes or to your taste.

 

Meanwhile cook fettuccine 12 minutes in the boiling water.

 

 Add diced bacon to vegetables in frying pan and drizzle a bit of olive oil over all.

 

Drain pasta, return to pot and add contents of frying pan plus butter to the pasta.

 

Mix gently, add fresh ground pepper and salt to taste. Grate in some Parmesan and stir.

Hey @LilBitMissty, great recipe, reminds me of one my Mom made years ago, but she also put lentils (cooked) in it, good frugal food

I never heard of this before and it sounds great for my DH.  I usually have all these ingredients and cannot think of something quick and easy but this is it for him.  I cannot eat bacon but he can and he loves it.  I will make some fettuccine.  I will cook veggies in vegetable oil and make mine, and then add the bacon, drain and put the remaining veggies with that and put cheese over both.

This sounds very greasy, plus the bacon seems like it would throw off the texture of dish. I never understand how bacon added to pasta or pizza is enjoyable.  It seems disruptive to the palette.
