(1) cup flour

(2) Tbsp baking powder

(2) Tbsp sugar

(1/2) tsp salt

(1) egg beaten

(1) cup milk

(2) Tbsp cooking oil

 

 

Combine all ingredients - batter may be a little lumpy. Cook on hot griddle - can also be put in walffle maker.

I make these every other a.m.  Some ideas:

 

Use self-rising flour and eliminate the salt and baking powder. Also a little vanilla adds more flavor also a little cinnamon. Fruit lovers, throw in blueberries, apples, strawberries, peaches, etc once you pour the batter on the grill or waffle maker.

 

Eat immediately or store in 300 oven for less than 15 min.

Bhvbum, that sounds delicious! I will try. I know....there's about a million different recipes for pancakes and different combinations of things to add.

Our new favorite:

 

Blueberry Oatmeal Yogurt Pancakes

 

1 2/3 all purpose flour   (I use 2/3 c ww flour and 1 cup white)

2/3 cup old fashioned rolled oats

2 Tablespoons sugar

1 1/4 tsp baking soda

1/4 tsp salt ( I usually omit bc I dont always have unsalted butter)

1 cup plain Greek Yogurt

1 cup milk

4 Tablespoons unsalted butter

2 large eggs

1 Cup blueberries (I keep bag of frozen)

 

Just mix dry, add wet and berries last. These freeze well and oven to reheat. Says 1/3 cup batter on to grill. It will seem thick but don't try to spread out. Let the cooking do this.
